Yogi Superfood granola
High in fiber, magnesium, and omega 3 fats, with the added benefits of energy-boosting coconut oil, this is one of my favorite go-to snacks that holds me over a long time and curbs sugar cravings. I like to separate these into large handfuls of about 1/2 cup each, and bring them with me to work, yoga, a long drive, shopping, or wherever I find myself that day.
*For breakfast, try about ¼ cup of this in some plain Greek yogurt!
The Goods:
.5 cups old-fashioned rolled oats (today I used the mayan blend by earnest eats w a hint of cocao) if you're gluten free, sub with gluten-free oats
cups raw mixed nuts (almonds, walnuts, pecans) coarsely chopped
cup raw pumpkin seeds
cup shredded unsweetened coconut
/2 cup pure maple syrup
/2 cup virgin coconut oil, melted
/3 cup coconut palm sugar
teaspoon sea salt
/2 teaspoon ground cinnamon
/4 teaspoon freshly grated nutmeg
/4 cup goji berries (or dried blueberries or cherries)
Preheat the oven to 300° F.
n a large bowl, combine the oats, nuts, pumpkin seeds, coconut, maple syrup, coconut oil, coconut sugar, salt, cinnamon, and nutmeg. Spread the mixture on a rimmed baking sheet in an even layer and bake until golden all over, about 45 minutes, stirring every 15 minutes or so.
ransfer the granola to a large bowl and stir in the goji berries.
